La Carnita’s second pop-up blows up with Beast’s Scott Vivian

The second edition of design firm One Method’s lunch time pop-up taco shop—er, art shop that happens to give out free tacos—drew even bigger crowds Thursday afternoon as the line went out the door of the firm’s second-floor King West office, down the stairs and out the door. News crews were even there to document it.

Why were people willing to line up for an hour to pay $10 for tacos? Well, One Method hit all the right notes when it comes to marketing: Twitter hype, limited quantities (first 150 people get served), exclusivity (La Carnita is open once every two weeks and sells out in less than two hours) and the idea of a fancy restaurant going cheap that makes the city’s ‘licious events such a success every year. In this case, guest chef Scott Vivian from Beast made a trio of beef cheek, achiote chicken and chorizo tacos.

There’s a clear appetite for more of these pop-ups but will just as many people line up if there are 20 similar shops around the city operating throughout the week? That question will probably be answered in the next year as more similar concepts will undoubtedly, ahem, pop up.
